avocado grilled cheese with tomato


What you will need:

  • 2 slices of bread, buttered (hearty whole wheat bread is best)
  • a few slices of cheese (pick your favorite, don't be afraid to experiment!)
  • 1/2 an avocado
  • the juice of 1/2 lemon (more or less to your preference)
  • a few slices of tomato (4-5 will do, depending on size of bread slices)
  • salt & freshly ground black pepper


Directions:

  1. Mash your avocado with your lemon juice in a small bowl with a fork. 
  2. Butter your bread, put one slice butter side-down on a skillet over medium heat (turn to medium-low or low if you find your bread is burning before your cheese is melting- it all depends on the thickness of your bread). I like to build my grilled cheese sandwiches on the skillet as everything is cooking.
  3. Add half the slices of cheese you have onto the bread. Add the mashed avocado-lemon juice combination onto that, flattening well. Ground the black pepper onto the avocado and sprinkle some salt to taste. Add the tomato slices onto that, and then place the remainder of your cheese on top of them. 
  4. Gently place the other slice of bread on top, butter side up. 
  5. When the bottom piece of bread is golden and crispy and cheese is semi-melted, flip the sandwich over until the other side matches the first.
  6. Enjoy with a nice cup of coffee or tea. Repeat.
